Lemon Feta Chicken

Ingredients
- 1 medium chicken breast fillet trimmed
- 50 g feta thickly sliced
- 2 sprigs oregano
- 1/2 tablespoon lemon zest
- 1 tablespoon lemon juice
- 1/2 punnet of cherry tomatoes
- 5 kalamata olives
- 1 cup sweet potato mash to serve
Instructions
- Preheat the oven to 180C.
- Place chicken in a baking dish then top with the feta, oregano, tomatoes, olives, lemon zest and juice. Season and sprinkle with olive oil.
- Bake for 18 minutes, or until chicken is cooked through. Serve with mash.
