Sesame Chicken & Spring Greens Bowl

- .5 tbsp sesame seeds
- 250 g chicken tenderloins
- 1 tbsp peanut oil
- 2 tbsp soy sauce
- 1 tsp ginger grated
- 1 clove garlic crushed
- 100 g frozen edamame
- 1 small avocado
- 2 radishes
- 100 g sugar snap peas
- .25 bunch coriander leaves picked
Coat the chicken with sesame seeds. Heat peanut oil in a large frying pan over high heat. Add the chicken and cook for 2-3 minutes each side or until brown and cooked through. Transfer to a plate, rest for 5 minutes then slice.
Meanwhile, combine soy, sesame oil, ginger and garlic in a bowl. Place edamame in a bowl and cover with boiling water for 3 minutes or until tender. Drain then refresh under cold water.
Divide edamame, avocado, peas, chicken, radish and coriander between bowls. Serve with soy dressing.
