Balsamic Chicken One-Tray Bake

Ingredients

  • 300 g mixed medley tomatoes
  • 1 bunch asparagus ends trimmed
  • 500 g chicken tenderloins
  • 1 tbsp extra virgin olive oil
  • 50 g feta
  • 2 tbsp balsamic glaze to serve

Instructions

  • Preheat oven to 220°C. Arrange the tomatoes and asparagus on a roasting tray. Top with chicken tenderloins and crumbled feta. Drizzle with olive oil and season with salt and pepper.
  • Bake for 10-20 minutes or until chicken is cooked through (the timing depends on the size of your chicken tenderloins. Drizzle with balsamic glaze and serve!
